1 cup of cauliflower florets

1 cup of broccoli florets

1 cup of carrots, finely grated

1 cup of corn kernels (fresh or frozen)

1/2 cup of breadcrumbs (panko for extra crunch)

1/4 cup of grated Parmesan cheese (optional)

2 cloves of garlic, minced

1/2 tsp of onion powder

1/2 tsp of paprika

1/2 tsp of salt (adjust to taste)

1/4 tsp of black pepper

1 egg, beaten (or flax egg for a vegan option)

Cooking spray or a drizzle of olive oil for frying

Instructions
 

Prepare the Veggies: Steam or microwave the cauliflower, broccoli, and carrots briefly until just tender. Drain any excess water and let them cool slightly.

    Mash and Mix: In a large mixing bowl, add the cooked veggies and use a potato masher or fork to mash them until they are mostly smooth but still have some texture. Stir in the corn kernels.

      Combine Ingredients: Add breadcrumbs, Parmesan cheese, garlic, onion powder, paprika, salt, black pepper, and the beaten egg to the mashed vegetable mixture. Mix until well combined. This should form a slightly sticky mass; if it's too dry, add a bit of water or more egg.

        Form Bites: Using your hands, scoop out small amounts of the mixture (about 1-2 tablespoons) and shape them into bite-sized balls or patties. You should get about 16-20 bites.

          Preheat Air Fryer: Preheat your air fryer at 375°F (190°C) for about 5 minutes for even cooking.

            Air Fry the Popcorn Bites: Lightly coat the air fryer basket with cooking spray, then place the veggie bites in a single layer (leave some space between each to allow air circulation). Lightly spray the tops with a bit more oil.

              Cook: Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. If you desire extra crunchiness, you can air fry for an additional 2-3 minutes.

                Cool and Serve: Once cooked, let the bites cool for a couple of minutes before serving. Enjoy warm with your favorite dipping sauce!
