Apple Cinnamon Oat Muffins

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

1 1/2 cups diced apples (about 2 small apples, peeled and cored)

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Instructions
 

Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    In a large bowl, combine the dry ingredients: rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk together until well mixed.

      In another bowl, whisk the wet ingredients: applesauce, vegetable oil, egg, and vanilla extract until smooth.

        Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined.

          Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

            Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, let muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
