Ingredients

6 slices of brioche or challah bread, cut into 1-inch cubes

2 large eggs

1 cup whole milk

1/2 cup heavy cream

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 medium apple, peeled, cored, and diced (preferably Honeycrisp or Granny Smith)

1/2 cup pecans, chopped

1/4 teaspoon salt

Butter (for greasing the muffin tin)

Powdered sugar (for garnish, optional)

Instructions

Preheat the oven to 375°F (190°C) and grease a standard 12-cup muffin pan with butter.

Prepare the custard mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined.

Assemble the bread cups: Add the cubed brioche or challah to the custard mixture, gently folding to ensure all pieces are soaked. Let it sit for about 10 minutes so the bread absorbs the liquid.

Incorporate the fruits and nuts: Gently fold in the diced apple and chopped pecans into the soaked bread mixture.

Fill the muffin pan: Spoon the mixture evenly into the prepared muffin cups, filling each about 3/4 way full. You can lightly press the mixture down with the back of a spoon to create a more compact cup.

Bake: Place the muffin pan in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and serve: Remove the muffin pan from the oven and allow the cups to cool in the pan for about 5 minutes. Use a butter knife around the edges for easy removal.

Garnish (optional): Dust with powdered sugar before serving for an extra touch of sweetness.

Enjoy: Serve warm! These apple pecan French toast cups make for a delicious breakfast or brunch treat, perfect for sharing.
