2 ½ cups all-purpose flour

1 tsp salt

1 tbsp granulated sugar

1 cup unsalted butter, cold and cubed

6-8 tbsp ice water

For the Apple Filling:

6 cups peeled and thinly sliced apples (Granny Smith, Honeycrisp, or a mix)

¾ cup granulated sugar

2 tbsp all-purpose flour

1 tsp ground cinnamon

¼ tsp ground nutmeg

1 tbsp lemon juice

1 tsp vanilla extract

For Assembly:

1 egg, beaten (for egg wash)

1 tbsp milk (for egg wash)

Instructions
 

Prepare the Flaky Crust:

    - In a large mixing bowl, combine flour, salt, and sugar. Mix well.

      - Add the cold cubed butter into the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs with pea-sized butter pieces.

        - Gradually add ice water, one tablespoon at a time, mixing lightly until the dough comes together (do not overwork).

          - Divide dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Make the Apple Filling:

              - In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss gently until the apples are evenly coated. Set aside to let the flavors meld.

                Preheat the Oven:

                  - Preheat your oven to 425°F (220°C).

                    Roll Out the Dough:

                      - After chilling, remove the dough from the fridge. On a floured surface, roll out one disk to fit a 9-inch pie pan. Transfer the rolled dough to the pie pan, pressing it gently to fit the shape.
