Ingredients

1 small head of green cabbage

1 lb ground turkey or beef

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded mozzarella cheese

1/4 cup marinara sauce (for topping)

Fresh basil leaves (for garnish)

Instructions

Prepare the Cabbage: Preheat your oven to 375°F (190°C). Remove the outer leaves from the cabbage and carefully slice the head into 1-inch thick rounds to create “nests.” You should aim for about 6 perfect rounds. Remove the core and set aside the cabbage nests.

Make the Burger Mixture: In a large bowl, combine the ground turkey (or beef), breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Form the Patties: Divide the mixture into equal portions and shape them into burger patties that are slightly smaller than the cabbage rounds.

Assemble the Nests: On a lined baking sheet, lay down the cabbage rounds. Place each burger patty on top of the rounds. Press gently to secure the patties into the nests.

Bake the Burgers: Bake in the preheated oven for about 25-30 minutes. After the patties are cooked through, remove the baking sheet and sprinkle shredded mozzarella cheese on top of each patty. Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven and spoon marinara sauce over each burger. Garnish with fresh basil leaves for a pop of freshness and flavor.

Enjoy: Serve each cabbage nest burger hot, either as is or with a side of your favorite veggie chips or salad.
