2 medium eggplants, sliced lengthwise into 1/4-inch thick strips

2 tablespoons olive oil

Salt and pepper, to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (plus extra for garnish)

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

3 cups marinara sauce (store-bought or homemade)

1 egg, beaten

Instructions
 

Prep the Eggplant: Preheat your oven to 400°F (200°C). Lay the eggplant slices on a baking sheet lined with parchment paper. Brush each slice with olive oil and sprinkle with salt and pepper. Roast in the oven for about 20 minutes, flipping halfway through, until golden brown and tender. Remove from the oven and let cool.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup of shredded mozzarella, Parmesan cheese, chopped basil, garlic powder, red pepper flakes, and the beaten egg. Mix until everything is well incorporated. Season with salt and pepper to taste.

      Assemble the Rollatini: Spread about 1/2 cup of marinara sauce evenly in the bottom of a baking dish. Take one eggplant slice and place a tablespoon of the ricotta mixture at one end. Roll the slice tightly, then place it seam side down in the baking dish. Repeat with the remaining slices and filling.

        Layer the Sauce and Cheese: Once all the rolls are in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese over the sauce.
