Ingredients

8 ounces pasta (penne or rigatoni)

1 block (8 ounces) feta cheese

2 pints cherry tomatoes (halved)

1/4 cup extra virgin olive oil

4 cloves garlic (sliced)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Grated Parmesan cheese (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, sliced garlic, dried oregano, red pepper flakes, salt, and pepper. Drizzle with half of the olive oil and toss everything together until well coated.

Add Feta: Place the block of feta cheese in the center of the dish. Drizzle the remaining olive oil over the feta. You can also sprinkle a little extra salt and pepper over the feta for added flavor.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the tomatoes burst and the feta is melted and golden.

Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water, then drain the pasta.

Mix Together: Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the feta and combine it with the tomatoes into a creamy sauce. Add the cooked pasta to the dish, along with a splash of the reserved pasta water to loosen the sauce. Toss everything to combine and coat the pasta.

Garnish and Serve: Finish with fresh basil leaves and grated Parmesan cheese on top. Serve hot and enjoy your delicious baked feta pasta!
