Ingredients

For the Cornbread Tenders:

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup granulated sugar

1 cup buttermilk

1/4 cup honey

2 large eggs

1/2 cup unsalted butter, melted

For the Honey Butter Glaze:

1/4 cup unsalted butter, softened

2 tablespoons honey

A pinch of salt

For Serving:

Optional: Additional honey for drizzling

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C) and grease a baking sheet or line it with parchment paper.

      Prepare the Dry Ingredients:

In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar. Whisk these together until evenly mixed.

          Mix the Wet Ingredients:

In another bowl, whisk together the buttermilk, honey, and eggs until well blended. Add the melted butter and continue whisking until combined.

              Combine the Mixtures:

Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; the batter should be lumpy.

                  Shape the Tenders:

Drop heaping spoonfuls of the batter onto the prepared baking sheet, forming tenders (oval shapes). You should be able to make about 12 tenders. Leave some space between each tender.

                      Bake:

Place the baking sheet in the preheated oven and bake for about 15-18 minutes, or until the tenders are golden brown on the edges and a toothpick inserted into the center comes out clean.

                          Prepare the Honey Butter Glaze:

While the cornbread tenders are baking, prepare the honey butter glaze by mixing the softened butter, honey, and a pinch of salt in a small bowl until smooth and creamy.

                              Glaze the Tenders:

Once the tenders are out of the oven, brush the tops generously with the honey butter glaze while they’re still warm.

                                  Serve:

Allow the tenders to cool slightly before serving. For extra sweetness, drizzle additional honey over the top if desired.

Enjoy your delicious, sweet, and savory Baked Honey Butter Cornbread Tenders as a delightful side dish or a fun snack!
