Baked Zucchini Parmesan Fries

2 medium zucchinis

1 cup breadcrumbs (preferably Panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 large eggs

1/4 cup all-purpose flour

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to help with crispiness.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into thin strips, about 1/4 inch wide, to resemble fries.

      Set Up Breading Station: In three separate shallow bowls, prepare your breading station:

        - In the first bowl, add the flour.

          - In the second bowl, beat the two eggs until well mixed.

            - In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and black pepper.

              Coat the Zucchini:

                - Take a zucchini strip and dip it into the flour, ensuring it is evenly coated.

                  - Shake off any excess flour, then dip it into the beaten eggs, allowing the excess to drip off.

                    - Finally, coat the zucchini strip in the breadcrumb mixture, pressing gently to adhere. Place the coated fry on the prepared baking sheet.

                      - Repeat with all zucchini strips.

                        Spray and Bake: Once all the zucchini fries are on the baking sheet, lightly spray them with cooking spray or drizzle a little olive oil over the top to help them crisp up.

                          Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, turning the fries halfway through to ensure even browning. They should be golden and crispy when done.
