1 cup rolled oats

1 cup mashed ripe bananas (about 2-3 bananas)

1/2 cup milk (dairy or non-dairy)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, baking soda, ground cinnamon, and salt. Stir until well combined.

      Blend Wet Ingredients: In another bowl, whisk together the mashed bananas, milk, honey (or maple syrup), applesauce, eggs, and vanilla extract until smooth and fully combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. If you’re adding nuts or chocolate chips, fold them in gently at this stage.

          Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full to allow room for rising.

            Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.

              Cool Down: Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
