1 cup ripe bananas (about 2 medium, mashed)

1 cup old-fashioned oats

1/2 cup almond flour (or whole wheat flour)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup fresh or frozen blueberries

1/4 cup chopped walnuts or pecans (optional)

A sprinkle of sea salt for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), and vanilla extract. Stir until well blended.

      Combine Dry Ingredients: In another bowl, whisk together the oats, almond flour, baking soda, cinnamon, and salt.

        Combine Both Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

          Fold in Blueberries and Nuts: Gently fold in the blueberries and chopped nuts if using, making sure not to break the blueberries.

            Scoop Mixture onto Baking Sheet: Using a tablespoon or a cookie scoop, drop mounds of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Optionally, sprinkle a little sea salt on top of each mound.

              Bake: Place the baking sheet in the oven, and bake for 12-15 minutes, or until the edges are lightly golden and the center is set.
