3 ripe bananas, mashed

1 cup rolled oats

1 cup all-purpose flour

½ cup brown sugar

½ cup unsalted butter, softened

1 tsp cinnamon

½ tsp nutmeg

½ tsp baking powder

¼ tsp salt

1 cup chopped walnuts (optional)

1 cup vanilla Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.

    Prepare the Banana Mixture: In a large mixing bowl, mash the ripe bananas until smooth. You can leave some small chunks for added texture if desired.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, flour, brown sugar, cinnamon, nutmeg, baking powder, and salt until well combined.

        Create the Crumble Topping: Add the softened butter to the dry mixture and use your fingers or a pastry cutter to blend until crumbly and resembles coarse sand. If you're using walnuts, fold them in here.

          Assemble the Crumble: Pour the mashed bananas into the prepared baking dish, spreading them evenly. Then, sprinkle the crumble topping over the bananas, ensuring an even layer.

            Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until the top is golden brown and the bananas are bubbling around the edges.
