Brisket has a storied history in barbecue culture, particularly in the United States, where it has become a staple in Southern and Texan cuisine. The cut of meat itself comes from the lower chest of the cow, which contains a significant amount of connective tissue and fat. This characteristic makes it ideal for slow cooking methods, allowing the meat to become tender and flavorful over time. Traditionally, brisket is smoked for hours, resulting in a rich, deep flavor that barbecue lovers crave.

Ingredients

2 cups cooked brisket, shredded or chopped

1 cup BBQ sauce (your choice, smoky or sweet)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large sandwich rolls (like hoagie or ciabatta)

1 tablespoon olive oil

1 small onion, thinly sliced

1 green bell pepper, thinly sliced

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions

Prepare the Vegetables: In a skillet, heat the olive oil over medium heat. Add the sliced onion and green bell pepper, sautéing until they become soft and translucent (about 5-7 minutes). Season with salt, pepper, and garlic powder. Remove from heat and set aside.

Mix the Brisket: In a large bowl, combine the cooked brisket with the BBQ sauce, mixing well to ensure the meat is thoroughly coated.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Assemble the Melts: Cut the sandwich rolls in half. On the bottom half of each roll, layer a generous portion of the BBQ brisket, followed by a portion of the sautéed onion and bell pepper. Top it off with a mix of shredded cheddar and mozzarella cheese.

Bake: Place the assembled sandwiches on a baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly, and the rolls are slightly crispy.

Serve: Once out of the oven, let the melts cool slightly. Garnish with fresh parsley if desired, then serve warm with extra BBQ sauce on the side for dipping.
