Ingredients

2 cups cooked, shredded chicken (preferably grilled or smoked)

1 cup BBQ sauce (your choice of flavor)

4 cups mixed salad greens (spinach, romaine, arugula)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 red bell pepper, diced

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup shredded cheddar cheese (optional)

1/4 cup cilantro, chopped

1/4 cup ranch dressing (or your favorite dressing)

Salt and pepper to taste

Instructions

Prepare the Chicken: If using grilled or smoked chicken, shred it into bite-sized pieces. Toss the chicken with the BBQ sauce in a large bowl until well coated.

Chop the Veggies: Prepare the mixed salad greens by washing and drying them thoroughly. Chop the greens into smaller pieces if desired and add them to a large salad bowl.

Add Ingredients: To the greens, add the cherry tomatoes, corn, black beans, red bell pepper, avocado, red onion, and cooked BBQ chicken.

Mix and Toss: Gently toss all the ingredients together until everything is well combined. Be careful with the avocado to keep it intact as much as possible.

Season and Dress: Drizzle the ranch dressing over the chopped salad and season with salt and pepper. Toss everything again lightly to coat the salad with the dressing.

Serve: Top with shredded cheddar cheese and fresh cilantro. Serve immediately as a hearty meal or side dish.
