BBQ Chicken Pasta Skillet

1 lb (450g) boneless, skinless chicken breasts, cubed

8 oz (225g) penne pasta

1 cup BBQ sauce (your favorite brand)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup corn kernels (fresh or frozen)

1 cup shredded mozzarella cheese

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley for garnish (optional)

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the cubed chicken and sprinkle with salt, black pepper, and smoked paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly browned.

      Add Vegetables: Add the diced onion, minced garlic, and sliced bell pepper to the skillet. Sauté for an additional 3-4 minutes or until the vegetables are tender.

        Combine All Ingredients: Stir in the corn and BBQ sauce, mixing well to coat all the ingredients. Let it simmer for about 2-3 minutes, allowing the flavors to meld together.

          Mix with Pasta: Add the cooked penne pasta to the skillet and gently toss everything together until the pasta is well coated with the BBQ sauce mixture.

            Cheesy Finish: Sprinkle the shredded mozzarella cheese over the top. Cover the skillet and let it sit for about 2-3 minutes or until the cheese has melted.
