For the beef marinade:

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

For the stir fry:

2 tablespoons vegetable oil (for cooking)

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 onion, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, minced

1 cup broccoli florets

1 cup snap peas

2 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon red pepper flakes (adjust for spice level)

Sesame seeds and chopped green onions for garnish

Instructions
 

Marinate the Beef: In a large bowl, combine the sliced flank steak with soy sauce and cornstarch. Mix well to coat the beef evenly. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prep the Vegetables: While the beef marinates, prepare all the vegetables by slicing the bell peppers, onion, and mincing the garlic and ginger. This will ensure quick cooking when stir-frying.

      Heat the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Stir-Fry the Beef: Add the marinated beef to the hot wok in a single layer. Let it sear for about 1-2 minutes without stirring to achieve a good brown color. Once browned, stir-fry for an additional 2-3 minutes until cooked through. Remove the beef from the wok and set aside.

          Stir-Fry the Vegetables: In the same wok, add the remaining vegetables (bell peppers, onion, broccoli, and snap peas). Stir-fry for about 3-4 minutes or until they are tender-crisp. Add the minced garlic and ginger, cooking for an additional 30 seconds until fragrant.

            Combine and Season: Return the cooked beef to the wok with the vegetables. In a separate bowl, mix the hoisin sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Pour this sauce over the beef and vegetables, tossing everything together until the sauce is well distributed and heated through (about 2 minutes).

              Garnish & Serve: Remove from heat and transfer the stir-fry to a serving dish. Garnish with sesame seeds and chopped green onions. Serve immediately over steamed rice or noodles.
