1 cup sharp cheddar cheese, grated

1/2 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a bit of heat)

Fresh chives or parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and sauté for another minute until fragrant.
