1 cup unsalted butter (2 sticks)

1 1/2 cups granulated sugar

1 cup packed brown sugar

1 teaspoon vanilla extract

4 large eggs

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup Biscoff cookie butter

1/2 cup chocolate chips (optional)

Extra Biscoff cookie crumbs for topping

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    Melt the Butter: In a medium saucepan over low heat, melt the butter. Once melted, remove from heat and let it cool for a few minutes.

      Combine Sugars and Eggs: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and the cooled melted butter until well combined. Add in the vanilla extract and mix well.

        Add Eggs: Beat in the eggs one at a time, mixing well after each addition until the mixture is smooth and glossy.

          Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Do not overmix.

            Incorporate Biscoff: Gently fold in the Biscoff cookie butter, allowing swirls to form in the batter. If desired, mix in chocolate chips for an extra layer of sweetness.
