1 medium cauliflower head, cut into florets

4 slices of bacon, cooked until crispy and crumbled

1 cup cherry tomatoes, halved

1/2 cup chopped fresh parsley

1/2 cup green onions, sliced

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Optional: 1 teaspoon smoked paprika for extra flavor

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Cauliflower: Toss the cauliflower florets with a drizzle of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Roast in the oven for 20-25 minutes, or until golden brown and crispy, turning them halfway through. Let cool.

      Prepare the Dressing: In a mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, and smoked paprika if using. Whisk until smooth and well combined. Season with salt and pepper to taste.

        Combine Ingredients: In a large bowl, combine the roasted cauliflower, crumbled bacon, halved cherry tomatoes, chopped parsley, and sliced green onions.
