Ingredients

2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup granulated sugar

2 large eggs

2 cups buttermilk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups fresh blueberries (or frozen, thawed)

Powdered sugar, for serving (optional)

Maple syrup, for drizzling (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.

Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Stir gently to combine, being careful not to overmix. It’s okay if there are a few lumps.

Add Blueberries: Gently fold in the blueberries until they are evenly distributed throughout the batter.

Pour into Baking Dish: Pour the pancake batter into the greased baking dish, spreading it evenly with a spatula.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the casserole from the oven and let it cool for a few minutes. If desired, dust with powdered sugar and serve warm with a drizzle of maple syrup.

Enjoy: Slice into squares, serve on plates, and enjoy your warm Blueberry Buttermilk Pancake Casserole either as a breakfast treat or a delightful brunch option!
