1 cup shredded cheddar cheese

1 cup baby spinach, roughly chopped

1 medium bell pepper, diced (red or green for a pop of color)

1 small onion, diced

1 avocado, sliced

1/2 cup salsa (your favorite, mild or spicy)

Salt and pepper to taste

Olive oil for cooking

Prepare the Ingredients: Start by gathering all your ingredients. Dice the onion and bell pepper, chop the spinach, and slice the avocado. Set aside.

    Cook the Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes.

      Add the Chorizo: Push the vegetables to one side of the skillet, add the cooked chorizo sausage to the other side, and heat through for an additional 2-3 minutes, mixing with the vegetables.
