Breakfast Grilled Cheese

Ingredients
  

4 slices of sourdough bread

4 slices of cheddar cheese

2 slices of crispy bacon

2 large eggs

2 tablespoons of unsalted butter

1 tablespoon of mayonnaise

½ avocado, sliced

Salt and pepper, to taste

Fresh chives, finely chopped (for garnish)

Instructions
 

Prepare the bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Reserve some bacon fat in the skillet for cooking the eggs.

    Cook the eggs: In the same skillet with a little bacon fat, crack the eggs gently. Season with salt and pepper. Cook to your desired doneness—sunny-side-up or over-easy works great.

      Assemble the sandwiches: Spread mayonnaise on one side of each slice of sourdough bread. On the unspread side of two slices, layer the cheddar cheese, crispy bacon, avocado slices, and cooked eggs. Place another slice of cheese on top, then cover with the remaining slices of bread, spread side out.

        Grill the sandwiches: In a separate skillet or griddle, melt 1 tablespoon of unsalted butter over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. You may need to press down with a spatula to ensure even cooking.

          Serve: Once grilled to perfection, remove the sandwiches from the skillet and slice them in half. Garnish with finely chopped chives and serve warm.
