Ingredients

1 medium head of green cabbage, chopped

1 pound smoked sausage (such as kielbasa or andouille), sliced into rounds

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon caraway seeds (optional)

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup chicken or vegetable broth

2 tablespoons apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Base: In a large skillet or Dutch oven, heat the olive oil over medium heat. Once hot, add the sliced smoked sausage and cook for about 5-7 minutes, stirring occasionally, until the sausage is browned and slightly crispy. Remove the sausage and set aside.

Sauté Vegetables: In the same skillet, add the diced onion and cook for about 3 minutes until it becomes translucent. Add minced garlic and cook for an additional minute until fragrant.

Cook the Cabbage: Add the chopped cabbage to the skillet and sprinkle with smoked paprika, caraway seeds (if using), red pepper flakes, salt, and pepper. Stir well to combine all the flavors. Cook for about 5-7 minutes, stirring occasionally, until the cabbage starts to soften.

Combine Ingredients: Return the browned sausage to the skillet with the cabbage. Pour in the chicken or vegetable broth and drizzle the apple cider vinegar over the top. Stir to combine.

Simmer: Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together.

Final Touches: Taste and adjust seasoning if necessary. Remove from heat and garnish with freshly chopped parsley before serving.

Serve & Enjoy: Serve hot, and enjoy this comforting and smoky dish with crusty bread or over rice for a complete meal.
