8 oz fresh mozzarella cheese (preferably buffalo mozzarella)

1 cup fresh basil leaves (whole)

2 tablespoons extra virgin olive oil

1/4 teaspoon sea salt (to taste)

1/4 teaspoon black pepper (to taste)

1/2 cup balsamic vinegar (for the glaze)

1 tablespoon honey (or maple syrup for a vegan option)

Prep the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey. Bring the mixture to a low boil over medium heat, then reduce the heat to low. Let it simmer gently for about 10-15 minutes, stirring occasionally, until it thickens and coats the back of a spoon. Remove from heat and let it cool.

    Slice the Tomatoes and Mozzarella: While the balsamic glaze cools, slice the tomatoes and mozzarella into even, thick slices (about 1/4 to 1/2 inch thick).

      Assemble the Salad: On a large serving platter, start layering the Caprese salad. Begin with a slice of tomato, then a slice of mozzarella on top, followed by a basil leaf. Repeat the layering process until all the ingredients are used, alternating between tomato, mozzarella, and basil.
