For the flatbread:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

3/4 cup warm water

2 tbsp olive oil

For the filling:

2 large onions, thinly sliced

3 tbsp olive oil (for sautéing)

1/2 tsp sugar

1/2 tsp salt

1 tsp balsamic vinegar

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped (optional)

For garnish:

Olive oil for drizzling

Fresh herbs (like thyme or oregano)

Instructions
 

Prepare the flatbread dough:

    - In a mixing bowl, combine the flour, baking powder, and salt. Add warm water and olive oil. Mix until a dough forms.

      - Knead the dough for about 5 minutes on a floured surface until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

        Caramelize the onions:

          - In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced onions, sprinkle with salt, and sugar. Stir to coat evenly.

            - Cook slowly for about 25-30 minutes, stirring occasionally, until the onions are soft, golden, and caramelized. Add balsamic vinegar and mix well. Remove from heat and let cool slightly.

              Combine filling ingredients:

                - In a bowl, mix the caramelized onions, crumbled feta cheese, and chopped parsley (if using). Set aside.

                  Shape the flatbreads:

                    - Divide the rested dough into 6 equal portions. Roll each portion into a ball, then flatten it into a round shape about 1/4 inch thick.

                      - Place a generous amount of the onion and feta mixture in the center of each round, then fold the edges over to seal, forming a stuffed pocket.

                        Cook the flatbreads:

                          - Heat a non-stick skillet or cast iron pan over medium-high heat. Lightly brush with olive oil.

                            - Cook each stuffed flatbread for about 4-5 minutes on each side, or until golden brown and puffed. Adjust heat as necessary to avoid burning.

                              Serve:

                                - Slice the flatbreads in half and drizzle with olive oil. Garnish with fresh herbs if desired. Serve warm.
