Caramelized Onion Pasta with Chilli Oil

12 oz spaghetti or your choice of pasta

4 medium yellow onions, thinly sliced

4 tablespoons extra virgin olive oil, divided

2 tablespoons unsalted butter

1 tablespoon brown sugar

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1/4 cup freshly grated Parmesan cheese (plus extra for serving)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Zest of 1 lemon

1/4 teaspoon red pepper flakes

1/4 cup chili oil (adjust based on spice preference)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil and the butter over medium heat. Add the sliced onions and sprinkle with salt and brown sugar. Stir to coat the onions. Cook, stirring occasionally, for about 20-25 minutes until the onions are deeply golden and caramelized. Lower the heat if needed to prevent burning.

      Season the Onions: Once caramelized, add black pepper, thyme, and lemon zest to the onions. Stir well to combine, allowing the flavors to meld for another 2 minutes.

        Combine: Add the cooked pasta into the skillet with the caramelized onions. Thoroughly mix in about half of the reserved pasta water, bringing the dish together. If the pasta seems dry, add more pasta water as needed.

          Add Chili Oil: Drizzle the chili oil over the pasta to your liking, stirring to incorporate the oil evenly throughout the dish.

            Serve: Plate the pasta, topping each serving with freshly grated Parmesan cheese, a sprinkle of red pepper flakes for an extra kick, and chopped parsley for freshness.
