1 lb (450g) fresh carrots, peeled and chopped

1 small onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

½ teaspoon ground turmeric

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Optional: A squeeze of lime juice for brightness

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger and cook for an additional 1-2 minutes until fragrant.

    Cook the Carrots: Add the chopped carrots to the pot, followed by the ground cumin, turmeric, salt, and pepper. Stir well to coat the carrots with the spices. Sauté for about 5 minutes.

      Add Broth: Pour in the vegetable broth, bringing the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the carrots are tender.

        Blend the Soup: Once the carrots are soft, remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.

          Stir in Coconut Milk: Return the blended soup to the pot (if using a blender) and stir in the coconut milk. Heat on low for an additional 5 minutes to warm through.
