Cauliflower Fried Rice

1 medium head of cauliflower, riced

2 tablespoons sesame oil

1 cup mixed vegetables (carrots, peas, bell peppers)

3 cloves garlic, minced

2 large eggs, lightly beaten

3 green onions, chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Red pepper flakes (optional, for heat)

Instructions
 

Prepare the Cauliflower: Remove the leaves from the cauliflower and cut it into quarters. Use a food processor to pulse the florets until they resemble rice grains (about the size of a grain of rice). Set aside.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Vegetables: Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they begin to soften. If you’re using fresh vegetables, like bell peppers and carrots, you might need to cook them a little longer.

        Scramble the Eggs: Push the vegetables to one side of the pan and pour the beaten eggs into the pan on the other side. Stir gently to scramble the eggs until fully cooked, about 2 minutes. Once cooked, mix the eggs with the vegetables.

          Add the Cauliflower Rice: Add the riced cauliflower to the skillet and mix all the ingredients together. Stir-fry for another 4-5 minutes, allowing the cauliflower to soften while not becoming mushy.

            Flavor It Up: Pour the soy sauce and oyster sauce (if using) over the cauliflower mixture. Stir well to combine, and season with salt, pepper, and red pepper flakes to your taste.

              Finish Touches: Toss in the chopped green onions and give everything a final stir. Cook for another minute until heated through.

                Serve: Remove from heat and garnish with fresh cilantro if desired. Serve hot as a side dish or a main course!
