Charred Corn Chipotle Skewers

4 ears of fresh corn, husked

1 Cup cherry tomatoes, halved

1 Red bell pepper, cut into 1-inch pieces

1 Green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch cubes

1 Cup marinated grilled chicken or tofu, optional

2 tbsp olive oil

2 tbsp chipotle chili powder

1 tsp smoked paprika

1 tsp garlic powder

Salt and black pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Skewers (wooden or metal)

Instructions
 

Prep the Corn: Start by boiling the husked corn in salted water for about 5 minutes. This will make the kernels tender. After boiling, remove the corn from the water and allow it to cool. Once cool, cut the kernels off the cob and set aside.

    Prepare the Vegetables: In a large bowl, combine the cherry tomatoes, red and green bell peppers, and red onion. If you're using marinated grilled chicken or tofu, add that to the mix as well.

      Make the Spiced Olive Oil: In a small bowl, whisk together the olive oil, chipotle chili powder, smoked paprika, garlic powder, salt, and black pepper. Pour this mixture over the vegetable and chicken/tofu mixture, tossing until all pieces are evenly coated.

        Skewer the Ingredients: Take your skewers and start threading the skewers with the marinated corn, cherry tomatoes, bell peppers, onions, and chicken/tofu (if using). Alternate between the corn and other vegetables to create colorful layers on each skewer.

          Preheat the Grill: Preheat your grill (or grill pan) on medium-high heat. If using wooden skewers, soak them in water for about 30 minutes prior to grilling to prevent burning.

            Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are charred and tender. Look for nice grill marks on the corn and other veggies.
