1 ¾ cups chocolate cookie crumbs (such as Oreos)

½ cup unsalted butter, melted

2 tablespoons sugar

For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

8 oz Godiva chocolate, melted (plus extra for drizzle)

2 tablespoons all-purpose flour

For the Ganache Topping:

1 cup heavy cream

8 oz Godiva chocolate, chopped

1 tablespoon unsalted butter

For Garnish (optional):

Chocolate shavings

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined and crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

              - Gradually add in the sugar and vanilla extract while continuing to beat until fully incorporated.

                - Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

                  - Mix in sour cream and flour until smooth, followed by the melted Godiva chocolate. Ensure everything is well blended and homogeneous.

                    Bake the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                        - Bake in the preheated oven for about 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cake cool in the oven for 1 hour to prevent cracking.

                          - Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.

                            Prepare the Ganache Topping:

                              - In a saucepan over medium heat, heat the heavy cream until it just begins to simmer.

                                - Pour the hot cream over the chopped Godiva chocolate and let it sit for 2-3 minutes. Stir until the chocolate is completely melted and the ganache is smooth. Add the butter and mix until combined.

                                  Assemble the Cake:

                                    - Once the cheesecake is chilled, remove it from the springform pan.

                                      - Pour the ganache over the top, allowing it to drip over the sides. Use a spatula to smooth it out if necessary.

                                        - For garnish, add chocolate shavings and dollops of whipped cream if desired.
