Cheesy Bacon Breakfast Casserole

8 slices of bacon, chopped

1 medium onion, diced

1 red bell pepper, diced

3 cups frozen hash browns, thawed

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain it on paper towels, reserving about 1 tablespoon of the bacon grease in the skillet.

      Sauté Vegetables: In the same skillet with the reserved bacon grease, add the diced onion and red bell pepper. Sauté until softened, about 5-7 minutes. Remove from heat.

        Prepare Casserole Base: In a large mixing bowl, combine the thawed hash browns, cooked bacon, sautéed vegetables, cheddar cheese, and mozzarella cheese. Toss everything together until evenly mixed.

          Mix Eggs and Milk: In another mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.

            Combine Mixtures: Pour the egg mixture over the hash brown and cheese mixture. Stir gently to combine until everything is well-coasted with the egg mixture.

              Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or a bit of butter. Pour the entire mixture into the dish and spread evenly.

                Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the eggs are set and the top is lightly golden.

                  Cool and Garnish: Allow the casserole to cool for about 5 minutes before serving. Garnish with fresh chives or parsley if desired.
