2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups shredded cheddar cheese

1 can (15 oz) chili (either beef or vegetarian)

1/2 cup sour cream

1/2 cup diced green onions

1/4 cup chopped fresh cilantro (optional)

Jalapeño slices (for garnish, optional)

Prepare the Potatoes: Start by preheating your oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Season the Fries: In a large bowl, toss the cut potato strips with olive oil, paprika, garlic powder, onion powder, salt, and pepper until they are evenly coated.

      Bake the Fries: Spread the seasoned fries in a single layer on a large baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

        Heat the Chili: While the fries are baking, heat the chili in a saucepan over medium heat until warmed through. Stir occasionally.
