1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 carrots, diced

3 cups chicken broth

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) cannellini beans, drained and rinsed

1 package (9 oz) refrigerated cheese tortellini

1 cup kale or spinach, chopped

1 tsp Italian seasoning

Salt and pepper to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Cook the Sausage: In a large pot, over medium heat, add the Italian sausage. Use a wooden spoon to break it up as it browns. Cook until it’s no longer pink, about 5-7 minutes. Drain any excess fat if necessary.

    Sauté Vegetables: Add the diced onion, bell pepper, and carrots to the pot. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and continue sautéing for an additional minute, until fragrant.

      Add Liquids and Season: Pour in the chicken broth, diced tomatoes (including juices), and cannellini beans. Stir in the Italian seasoning and season with salt and pepper to taste. Bring the mixture to a simmer.

        Add Tortellini: Once the soup is simmering, add the cheese tortellini. Cook according to package instructions, usually about 3-5 minutes, until the tortellini is tender.

          Incorporate Greens and Cream: Stir in the chopped kale or spinach and let it wilt for about 2 minutes. Then, pour in the heavy cream and stir until combined. Allow the soup to heat through, making sure it doesn’t boil.
