300g (10.5 oz) pasta (penne or fusilli preferred)

2 cups fresh spinach, chopped

250g (8.8 oz) mushrooms, sliced (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 cup marinara sauce (or your favorite pasta sauce)

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, boil salted water and cook the pasta until al dente, according to package instructions. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms; cook until the mushrooms are tender and any liquid they release has evaporated, about 5-6 minutes.

        Incorporate Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and dried Italian herbs.

          Mix the Cheeses: In a large mixing bowl, combine the ricotta, half of the mozzarella, and half of the Parmesan cheese. Stir in the sautéed vegetables along with the cooked pasta. Pour in the marinara sauce and mix well until everything is coated.

            Assemble the Bake: Transfer the pasta mixture into a greased 9x13-inch (23x33 cm) baking dish. Top with the remaining mozzarella and Parmesan cheese. If you like a crispy topping, sprinkle breadcrumbs evenly over the cheese layer.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
