Cheesy Spinach and Sausage Quinoa Bake

1 cup quinoa, rinsed

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 small onion, chopped

3 cloves garlic, minced

1 pound Italian sausage (sweet or spicy), casings removed

4 cups fresh spinach, chopped (you can substitute with frozen, thawed and drained)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

2 large eggs, beaten

Fresh parsley or basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or a similar-sized casserole dish with non-stick spray or olive oil.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

      Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and stir for an additional 1 minute.

        Add Sausage: Add the Italian sausage to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.

          Add Spinach: Stir in the chopped spinach, oregano, red pepper flakes, salt, and pepper. Cook for about 2-3 minutes until the spinach has wilted down. Remove from heat.

            Combine Ingredients: In a large bowl, combine the cooked quinoa, the sausage and spinach mixture, ricotta cheese, 1/2 cup of shredded mozzarella, Parmesan, and beaten eggs. Mix until well combined.

              Transfer to Baking Dish: Pour the quinoa mixture into the prepared baking dish, spreading it evenly. Top with the remaining 1/2 cup of mozzarella cheese.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or basil if desired, then slice and serve warm.
