For the Crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

For the Filling:

1 cup sweetened shredded coconut

1 cup cherry pie filling (homemade or store-bought)

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon almond extract

For the Topping:

1/2 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup toasted coconut for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper for easier removal.

    Make the Crust: In a medium bowl, combine the flour, powdered sugar, softened butter, and salt. Mix until the dough is crumbly but holds together when pressed. Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.

      Prepare the Filling: In a large mixing bowl, combine the sweetened shredded coconut, cherry pie filling, granulated sugar, eggs, vanilla extract, and almond extract. Stir gently until the mixture is well combined.

        Assemble the Bars: Pour the cherry-coconut filling over the pre-baked crust, spreading it evenly. Bake for an additional 25–30 minutes, or until the filling is set and the top is lightly golden.

          Cool the Bars: Remove the bars from the oven and let them cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours to firm up.

            Make the Topping: In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
