For the Chicken and Sauce:

1 lb boneless, skinless chicken thighs, diced

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups low-sodium chicken broth

1 cup frozen peas

Salt and pepper to taste

For the Dumplings:

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

2 tablespoons unsalted butter, melted

Chopped fresh parsley for garnish (optional)

Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken thighs and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

    Cook the Vegetables: In the same skillet, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are soft and the onion is translucent.

      Create the Sauce: Stir in the thyme and rosemary, followed by the chicken broth. Bring the mixture to a gentle simmer, then add the cooked chicken back into the skillet. Let it simmer for 10 minutes, allowing the flavors to meld.

        Make the Dumpling Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix the buttermilk and melted butter. Gradually combine the wet ingredients with the dry ingredients, stirring until just combined. Do not overmix; the batter should be slightly lumpy.

          Add Peas and Drop Dumplings: Stir in the frozen peas into the chicken mixture. Using a spoon or a cookie scoop, drop spoonfuls of the dumpling batter over the chicken and sauce in the skillet.

            Cook the Dumplings: Cover the skillet with a lid and let cook for 15-20 minutes on low heat. Do not uncover while cooking; this keeps the steam in and helps the dumplings rise and cook through.

              Garnish and Serve: Once the dumplings are cooked through and fluffy, remove from heat. If desired, sprinkle with fresh chopped parsley for added flavor and color before serving.
