1 lb (450g) cooked chicken, shredded or diced

1 bag (30 oz) frozen hashbrowns (about 850g)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 small onion, finely chopped

2 cups mixed vegetables (such as peas and carrots), frozen or fresh

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and black pepper to taste

1 cup crispy fried onions (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the mixture: In a large mixing bowl, combine the shredded chicken, frozen hashbrowns, cream of chicken soup, sour cream, 1 cup of cheddar cheese, chopped onion, mixed vegetables, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.

      Transfer to baking dish: Grease a 9x13 inch (or an equivalent size) baking dish with non-stick spray or butter. Pour the hashbrown mixture into the prepared baking dish, spreading it evenly.

        Add toppings: If desired, sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole. For extra crunch, you can also add crispy fried onions on top.
