Chicken Wraps with Garlic and Cheese

2 boneless, skinless chicken breasts

3 cloves garlic, minced

1 cup shredded mozzarella cheese

1 cup spinach leaves

1 medium red bell pepper, sliced

1 medium onion, thinly sliced

4 whole wheat tortillas

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon paprika

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (optional for garnish)

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, salt, pepper, paprika, and Italian seasoning. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

    Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade and add it to the skillet. Cook for about 6-7 minutes on each side, or until no longer pink in the center and juices run clear. Remove from heat and let rest for 5 minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add the sliced onion and red bell pepper. Sauté for about 5 minutes or until soft. Add the spinach leaves and cook for another minute until wilted.

        Assemble the Wraps: On each tortilla, layer the sliced chicken, sautéed vegetables, and a generous sprinkle of mozzarella cheese.

          Wrap it Up: Fold the sides of the tortilla in and roll it up tightly from the bottom to the top.
