Ingredients

1 lb chicken tenders

1 ripe mango, peeled and diced

1/4 cup chili sauce (sweet or spicy, based on preference)

2 tbsp honey

1 tbsp soy sauce

1 tbsp fresh lime juice

1 tsp garlic powder

1 tsp ground ginger

1/2 tsp salt

1/2 tsp black pepper

1/4 cup all-purpose flour

1/4 cup breadcrumbs (Panko for extra crunch)

1/4 cup vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a large bowl, combine the diced mango, chili sauce, honey, soy sauce, lime juice, garlic powder, ginger, salt, and black pepper. Mix well. Add the chicken tenders and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.

Prepare the Breading: In a shallow dish, combine the flour and breadcrumbs. Mix until well combined.

Coat the Chicken: Remove the chicken tenders from the marinade, shaking off excess. Dredge each tender in the flour and breadcrumb mixture, ensuring they're evenly coated.

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot (you can test it by dropping a small piece of bread in; it should sizzle), you're ready to fry.

Fry the Chicken Tenders: Add the breaded chicken tenders to the skillet in batches, being careful not to overcrowd them. Cook for about 4-5 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). You may need to adjust the heat to prevent burning.

Drain and Serve: Once cooked, remove the chicken tenders from the skillet and place them on a plate lined with paper towels to soak up excess oil.

Garnish: Transfer the chicken tenders to a serving platter, garnish with freshly chopped cilantro, and serve with lime wedges for squeezing over.

Enjoy!: Pair your Chili Mango Chicken Tenders with a side of rice, a fresh salad, or your favorite dipping sauce!
