4 large whole wheat tortillas

1 cup cooked quinoa

1 ripe mango, diced

1 cup black beans, rinsed and drained

1 avocado, sliced

1 cup shredded red cabbage

1 small red onion, thinly sliced

1 jalapeño, finely chopped (seeds removed for less heat)

1/2 cup fresh cilantro, chopped

1/4 cup lime juice

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup tortilla chips, crushed (for crunch)

Instructions
 

Prepare the Dressing:

    In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper. Set aside.

      Combine the Filling:

        In a large mixing bowl, combine cooked quinoa, diced mango, black beans, sliced avocado, shredded red cabbage, sliced red onion, chopped jalapeño, and cilantro. Pour the dressing over the mixture and gently toss to combine, being careful not to mash the avocado.

          Assemble the Wraps:

            Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling mixture onto the center of the tortilla, leaving about a 2-inch border around the edges. Sprinkle a handful of crushed tortilla chips over the filling for added crunch.

              Wrap It Up:

                Fold the sides of the tortilla inward, then roll it from the bottom up to create a snug wrap. Repeat this process for the remaining tortillas.

                  Toast the Wraps (optional):

                    Heat a non-stick skillet over medium heat. Place each wrap seam-side down in the skillet and toast for about 2-3 minutes on each side, until golden brown and crispy.

                      Serve:

                        Cut each wrap in half diagonally and serve with extra lime wedges and your favorite salsa or hot sauce on the side.
