2 ripe avocados, halved and pitted

1 cup low-sodium vegetable broth

1 cup coconut milk (full fat for creaminess)

1/4 cup fresh lime juice (about 2 limes)

1 small cucumber, peeled and roughly chopped

1 garlic clove, minced

1 teaspoon ground cumin

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Optional toppings: Diced radishes, sliced jalapeños, or tortilla strips

Instructions
 

Prepare the Avocados: Start by scooping the flesh of the avocados into a blender or food processor. Discard the skins and pits.

    Blend the Ingredients: Add the vegetable broth, coconut milk, lime juice, chopped cucumber, minced garlic, ground cumin, and cayenne pepper into the blender with the avocados. Season with salt and pepper to taste.

      Puree Until Smooth: Blend on high speed until the mixture is completely smooth and creamy. If the soup is too thick, you can add more vegetable broth to achieve your desired consistency.

        Chill the Soup: Transfer the blended mixture into a large bowl or airtight container. Cover and refrigerate for at least 1 hour, or until nicely chilled.

          Taste and Adjust: Once chilled, taste the soup and adjust seasoning with more lime juice, salt, or pepper if needed.

            Serve: Ladle the soup into bowls and garnish with fresh cilantro leaves. Add optional toppings such as diced radishes, sliced jalapeños, or crispy tortilla strips for added texture and flavor. Serve with lime wedges on the side.
