Ingredients

1 cup unsweetened shredded coconut

1 cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

½ cup (1 stick) unsalted butter, softened

½ cup granulated sugar

½ cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

1 cup semi-sweet chocolate chips

½ cup chopped nuts (optional, pecans or walnuts work well)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and shredded coconut. Set aside.

Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; small lumps are okay.

Fold in Chocolate Chips and Nuts: Gently fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter.

Spread the Batter: Pour the batter into the prepared baking pan, using a spatula to spread it evenly.

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown, and a toothpick inserted in the center comes out clean or with a few moist crumbs.

Cool and Cut: Once baked, remove the pan from the oven and let it cool in the pan for about 10-15 minutes. Then, lift the bars out using the parchment paper (if used) and let them cool completely on a wire rack. Cut into squares or bars once cooled.

Serve and Enjoy: Serve your delicious chocolate chip coconut bars at room temperature, or warm them slightly for a gooey treat. Enjoy!
