1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

Juice and zest of 2 limes

1/4 cup fresh cilantro, chopped (plus more for garnish)

3 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 avocado, sliced

1/2 cup crumbled queso fresco

Lime wedges for serving

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, lime juice, lime zest, chopped cilantro, garlic, cumin, smoked paprika, chili powder, salt, and pepper. Mix well.

      - Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

        Cook the Chicken:

          - Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting any excess drip off.

            - Grill the chicken thighs for about 5-7 minutes on each side, or until cooked through (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes.

                - While the chicken is resting, warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side until pliable.

                  Slice the Chicken:
