Cinnamon Cream Cheese Muffins

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¾ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, melted

2 large eggs

1 cup buttermilk

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup granulated sugar

1 teaspoon vanilla extract

1 egg yolk

For the Cinnamon Sugar Topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

2 tablespoons unsalted butter, melted

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them.

    Prepare the Cream Cheese Filling: In a mixing bowl, beat the softened cream cheese, ¼ cup granulated sugar, 1 teaspoon vanilla extract, and egg yolk together until smooth. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, granulated sugar, and brown sugar until well combined.

        Combine Wet Ingredients: In another bowl, mix melted butter, eggs, buttermilk, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill Muffin Cups: Spoon half of the muffin batter into the prepared muffin cups, filling each about halfway. Then, add a generous dollop of the cream cheese filling on top of the batter in each cup. Finally, spoon the remaining muffin batter on top, filling each cup almost to the top.

              Prepare Cinnamon Sugar Topping: In a small bowl, mix together ¼ cup granulated sugar and 1 teaspoon ground cinnamon. Brush the tops of the muffins with melted butter and sprinkle the cinnamon sugar mixture generously over each muffin.

                Bake the Muffins: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
