8 ounces rice noodles

1 cup snow peas, trimmed

1 cup bell peppers, thinly sliced (use a mix of colors for vibrancy)

1 cup shredded carrots

1/2 cup red cabbage, thinly sliced

4 green onions, sliced (white and green parts separated)

1/4 cup chopped fresh cilantro

1/4 cup crushed peanuts (for garnish)

Peanut Sauce:

1/3 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon lime juice

2 teaspoons minced garlic

1 teaspoon grated fresh ginger

Water (as needed for thinning)

Instructions
 

Cook the Noodles:

    Bring a large pot of salted water to a boil. Cook the rice noodles according to the package instructions until tender but still firm. Drain and rinse under cold water to stop the cooking process. Set aside.

      Blanch the Snow Peas:

        In a medium pot of boiling water, blanch the snow peas for 1-2 minutes until vibrant green and tender-crisp. Drain and immediately plunge into an ice bath to retain their color. Drain again and set aside.

          Prepare the Peanut Sauce:
