Cold Spaghetti Veggie Salad

8 oz spaghetti pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1 cup carrots, grated

1 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup olives, sliced

Salt and pepper, to taste

1/4 cup olive oil

2 tbsp lemon juice

1 tsp dried oregano

1 tsp garlic powder

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Veggies: While the pasta is cooking, chop all the vegetables and herbs. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, grated carrots, avocado, red onion, parsley, and olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, and a pinch of salt and pepper. Adjust the seasoning to taste.

        Combine: Add the cooled spaghetti to the bowl with the vegetables. Pour the dressing over the top. Gently toss everything together until well combined and the pasta is coated with the dressing.
