Ingredients

1 pound rigatoni pasta

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef (or Italian sausage for added flavor)

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional, for a little heat)

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: Boil a large pot of salted water. Add the rigatoni and cook until al dente, about 8 minutes. Drain and set aside.

Prepare the Meat Sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.

Brown the Meat: Add the ground beef (or sausage) to the skillet. Cook until browned, breaking it apart with a spoon, about 8–10 minutes. Drain excess fat if necessary.

Combine Ingredients: Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Bring the sauce to a gentle simmer and let it cook for about 15 minutes, stirring occasionally.

Assemble the Dish: In a large bowl, combine the cooked rigatoni and meat sauce. Mix well to ensure the pasta is well-coated.

Layer the Casserole: Spread half of the pasta mixture into a greased 9x13 inch baking dish. Spoon dollops of ricotta cheese over the pasta, and sprinkle with half of the mozzarella cheese. Spread the remaining pasta mixture on top, finishing with the rest of the mozzarella and the grated Parmesan cheese.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Once baked, allow the rigatoni to cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
