2 ripe avocados

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup corn (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup Greek yogurt or sour cream

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1 jalapeño, finely diced (for heat)

Prepare the Avocados: Cut the avocados in half and gently remove the pit. Using a spoon, scoop out a bit of the flesh to create a larger cavity for the filling. Set aside the scooped flesh for later use.

    Make the Filling: In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, red onion, corn, and chopped cilantro. If you like a little heat, add the finely diced jalapeño. Stir well to combine.
