Creamy Baked Penne with Italian Sausage

12 oz penne pasta

1 lb Italian sausage (mild or spicy, casings removed)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 can (14.5 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

2 cups fresh spinach

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage. Use a spatula to break it into small pieces and cook until browned, about 5-7 minutes. Remove excess grease if necessary.

      Add Aromatics: To the sausage, add the diced onion and sauté for about 3 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

        Combine Sauce Ingredients: Add the crushed tomatoes, heavy cream, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Stir well and allow the mixture to simmer for about 5 minutes. Season with salt and pepper to taste.

          Incorporate Spinach and Cheese: Add the fresh spinach to the sauce mix and stir until wilted, about 2 minutes. Gently fold in the cooked penne pasta until well combined. Stir in 1 cup of mozzarella cheese, reserving the remaining cup for topping.

            Transfer to Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish and transfer the creamy penne mixture into it. Spread it out evenly.
